Now I am not one to toot my own horn, but one of the dishes I made earlier this month was one of my best. I will choose to highlight one aspect in particular that made the dish extra special (and spicy); the Mango Salsa. I topped it over baked Mahi Mahi and had a side of roasted potatoes and asparagus. Who knew the financial advisor was a part time chef? Ingredients: 1 Ripe mango, peeled, pitted and diced 1/2 medium red onion 1 jalapeno chile, minced (include ribs and seeds for a hotter taste if desired 3 Tblsp fresh cilantro leaves, chopped 3 Tblsp fresh lime juice Salt and Pepper to taste Combine all the ingredients in a bowl, season to taste. If it ends up being too hot for your taste, you can temper it with tomatoes or avocados. ENJOY!
