If you’re like me, then you are a foodie who loves to eat. So you also probably know that if left unchecked, food can be the biggest hole in your budget! The idea of cooking more meals at home sounds good in theory but without knowing what to make, how much time it’s gonna take and how much it’s going to cost, you might just decide that eating out is easier than meal planning.

 

With our “new” concept, #MealsThatMakeCents I want to take all the guesswork away for you! Each recipe will take less than an hour to make, it will provide multiple servings which means saved time on cooking for the week. It will also be a new and fun recipe that you won’t have to come up with yourself and all meals will be around $4.00-8.00 a serving give or take. Our goal is to help you save money here, so you can better allocate it towards other important financial goals. Our first recipe and cost break down are below and you can watch me walk through the steps in this video.

 

Baked Salmon, Roasted Asparagus & Sweet Potato Hash

  • 3 Bell Peppers – $3.27
  • Two bundles of Asparagus $6.00
  • 1/4 bag of dried cranberries $1.00 (the whole bag cost $4.00)
  • Wild Caught Salmon $27.00 (more vegetarian recipes to come!)
  • 4 large Sweet potatoes $3.44
  • 1 yellow onion .92
  • Salt
  • Pepper
  • Ground cinnamon
  • Honey

Prep Time –15-25 minutes

Cook Time -20-25 minutes

As a general rule of thumb, I don’t count the cost of seasonings or condiments that I keep on hand like salt, pepper, olive oil etc.

 

STEP 1: Preheat the oven to 450 degrees.

STEP 2: Rinse of salmon, dry and season with salt, pepper and a squeeze of lemon juice.

STEP 3.: Line a baking pan with aluminum foil and lightly coat with olive oil.

STEP 4: Place Salmon in the pan drizzle a little more olive oil on top of salmon.

STEP 5: Place to the side and prep other ingredients.

STEP 6: Roughly chop your sweet potatoes into 1/2 inch squares.

STEP 7: Roughly chop your bell peppers and onion. Combine the onion, bell peppers and sweet potatoes together in a bowl.

STEP 8: Place Salmon in Oven for 20-25 minutes @ 450 degrees.

STEP 9: Cut the ends off of the asparagus, lightly coat a non-stick baking sheet with olive oil. place the asparagus on the baking sheet, season with salt, pepper and a squeeze of lemon juice. Drizzle a little olive oil on top.

STEP 10: Place asparagus in the oven for about 10 minutes at 450 degrees.

STEP 11: Heat a non-stick pan on medium-high heat with  2 tablespoons of olive oil. Add all ingredients for sweet potato hash to the pan, stirring frequently. Season evenly with cinnamon, black pepper, salt. Once they have been cooking for 8 minutes or so and begin to get soft, add drizzles of honey to the hash to your taste 3 tablespoons is what I use. Add two handfuls of dried cranberries and fold into the hash.

STEP 12: Once the potatoes are softened to your liking, remove from heat. Begin plating with the salmon and asparagus, eat and enjoy!

 

This entire recipe cost about $41.00 per serving, in the video I mention that it’s about 7.40 cents per serving which is actually a little off.. oops! it’s more like $8.20. Forgive me, I was ready to eat so I missed the mark a little 🙂 Anywho, I hope you enjoyed the recipe, let me know if you would like to see more of these in the future!
